There’s nothing more satisfying than a big hot one pot dish to serve at a dinner party, feeds the kids for a quick and easy midweek dinner or as a filling meal prep for the week ahead.
Containing protein-dense chicken, creamy leeks and mushrooms and filling gnocchi, there’s not much this dish doesn’t contain (aside from greens). It’s satisfying enough to fill you to the brim and impress guests, but as it’s a Joe Wicks special, you can be sure it’s not as unhealthy as it may appear. Gnocci often gets a bad schtick due to being part of the pasta family, but used in a large dish among other healthy ingredients, it can be enjoyed as part of a well-round diet.
We recommend serving the chicken and leek gnocci bake with a side of seasonal vegetables for a nutrient-dense, well-rounded dinner. Glad of red wine optional. Or, if you’re feeling prepping for the week ahead, pair a smaller portion with a leafy green salad for a light and healthy lunch that won’t ave you running for the snack drawer at 3pm.
Joe says: "Gnocchi is becoming my new favourite carb source. I can’t work out if it’s a potato or a pasta but I don’t care because it tastes so good. The kids and adults will all enjoy this one."
